This is a crowd pleaser. It is simple, clean, and easy to make. Using canned Chickpeas is a great way to save a lot of time.
What you need:
- 2C Chickpeas (precooked, well drained)
- 1/2c Tahini
- 1/4 c Extra virgin Olive oil
- 2 cloves of garlic (peeled)
- Juice of one lemon (a little more for storage)
- Salt and ground black pepper to taste
- 1Tbsp ground Cumin or paprika
Food Processor for processing
What you do:
- Put all of the ingredients into the food processor and blend until smooth, or desired consistency. be sure to taste periodically and adjust any flavors with additional ingredients. Smoothing out a chunky Hummus can be done with olive oil, water, or some of the juice that the chickpeas were canned in.
- Serve immediately. if you find that the Hummus is browning, add some lemon to the hummus and stir in.
This is not my recipe. I found this one on New York Times Cooking. It is a great recipe, but to access it directly, you will need a subscription. I have found over the years, the annual subscription is worth the cost, as you not only get recipes, but instruction videos, newsletters and a great app.
