Mango and Tequila Salsa

What you need:

-  6 Mangos  (Peeled and diced)

-  2 Green Chiles (Seeded and Minced)

-  1 Red Bell Pepper  (Seeded and Diced)

-  1 Green Bell Pepper  (Seeded and diced)

-  2 Cups Orange Juice

-  1 Cup Tequila (No Worm.  you want tequila that has a bite to it.)

-  1 Lime (Cut into wedges for garnish)

-  Sprinkle of Cilantro  (optional)

What you do:

Since the mango can be delicate, I do recommend After all of the fruit and veggies are prepared accordingly, mix in 3/4 Cup of the Orange juice and 3/4 Cup of the tequila.  Stir to mix well and let it stand in the bowl, covered and in the fridge, overnight.  The next morning, open the bowl and taste test the salsa.  If the Salsa is really thick, and needs a "kick", add the Organge Juice to thin slightly and add Tequila to get that kick.  Jose Cuervo is a good brand to use for this, as it has a bit if a bite to it already.

Serving suggestions:

This is a really great salsa, very versitile.  It can be served as-is, for a snack or appetizer.  For this, simple tortilla chips are the best.  This is also a great option to use as you would a chutney, for pork, chicken, or perhaps even fish.
