Refrigerator Pickles

What you need to know

This recipe holds a special place in my heart.  As kids growing up, my mom and dad would make these for us.  If my memory servers, this recipe is actually from our neighbor's across the street from where we grew up, the Kernan's.  Refrigerator Pickles are a simple, sweet, tart, crunchy treat that we would snack on all summer long.  The Pickles were mad in an empty ice cream bucket, and was kept in the frig, and just refilled as needed.


What you need::

-  A few Cucumbers (4-6) sliced thin

-  1 Cup of Green Peppers sliced

-  1 Cup of Onion sliced

-  2 Tbsp Salt

-  1 Tsp Celery Seed

-  1.5 Cup Sugar

-  3/4 cup Vineagar

-  a medium to large size container.


What to do:

Mix the dry ingredients together and mix in with the cucumbers.  Add the vinegar and mix well.  Refrigerate for about 12 hours, but 24 is better.


Notes:  This might seem dry to start, but the vinegar should draw out some othe moisture from the cucumbers and eventually the sugar will dissolve.  You can use the brind for a long time.  As you eat down the cucumbers, just add more cucumbers.  A batch of the brine should last at least 2 batches of cucmbers.
